Pure honey crystallizes. Crystallization is a natural process of honey that consists of the physical change of its texture, as it varies from liquid to solid.

Many times they think that the honey has gone bad after this process, because its color is less intense, the texture is sandy/buttery and crystals form; but there is no reason why worry this is nothing more than a natural indicator of the purity of this great food.

To return the honey to its liquid state, it is heated in a bain-marie, without the water being very hot, and thus it returns to its initial liquid state.
